If you go to the SEO Settings page, you should find a Schema Settings meta box.
Within the second and third tabs, you can uncheck the checkboxes for the things you wish to have disabled.

I recommend using The SEO Framework for Structured Data output, however; as you can’t go wrong with that 🙂 More on that is found here.
