Scotland for New Year

We are from Australia and we are finishing our big European Holiday in Scotland... there is 3 of us...
We arrive in Edinburgh in the afternoon of December 26.  Problem is that we want to see as much as we can but we only have such a short time  :'(
We are wanting to see the Highlands, castles, the Isle of Skye, Jacobite history and be back in Edingburgh for New Year's Eve.  
We then head for home and reality on the 2nd January.
Any suggestions would be greatly appreciated.
