Mike and his wife Stephanie stayed with us in July 2017 during their tour of the UK and this terrific poem reached us just a couple of days after their visit.&nbsp; Mike has given us his permission to share the poem, and incredibly says that&nbsp; some day when he has the right melody he may record it as a song for us - how wonderful is that?</p>

<p>Phew, here are some of the jars of marmalade I made this week for guests&#39; breakfasts at The Dulaig!</p>

<p>For just a few short weeks in January Seville oranges become available in the shops. These special fruits are perfect for using to make mamalade. Bitter to taste when fresh, with the addition of sugar and lemon juice (and plenty elbow-grease to chop and slice them) they are transformed by cooking into zingy gorgeousness! &nbsp;Adding demerara instead of refined sugar gives the marmalade a &quot;deeper&quot; flavour, and other ingredients such as ginger and/or malt whisky give yet more flavour options......all absolutely delicious.</p>

<p>With our other home-made marmalades, including Pink Grapefruit, and lots of home-made jams too - and, of course, our home-made breads - our guests tell us they are spoiled for choice every morning!&nbsp;</p>

<p>The Good Hotel Guide 2017 includes The Dulaig in their &quot;Top Ten Hotels for Whisky Lovers&quot;, and the Huffington Post, one of the top 50 American internet sites, has published an article about this, including us!</p>

<p>We know from experience here in Grantown-on-Spey that most of our B&amp;B guests have an interest in malt whisky, some starting out on their own whisky journey and others already whisky lovers. We love malt whisky too and it is terrific to be able to share our knowledge - and enjoy the odd dram - with our guests.</p>

<p>After this exciting news I think we will be having a wee nip tonight. <content:encoded><![CDATA[<h2>An OTTER is visiting The Dulaig garden....we really do have a wildlife haven!</h2><p>Since arriving at The Dulaig eight years ago we have tried to make our gardens a haven for wildlife as well as for our guests.</p>

<p>We know that every year we can see more and more birds and mammals visiting us and for fun we installed some cameras to see what is visiting us when we are not looking. We could not believe our eyes when one of our cameras picked up an OTTER!</p>

<p>From the spraint (you can see it on the rock above and behind the otter) we know it is visiting regularly and have managed to capture a night film of it too.</p>

<p>Otter are notoriously difficult to spot in the wild and having in the past travelled many miles across Scotland looking out for them it is amazing to discover that one is regularly visiting us!! &nbsp;</p>

<p>I wonder what hidden gems our camera will capture next time......</p>

<p>Some combinations work really well, like this Acer Dissectum, paeony, Japanese anemone, Japanese granite bowl....and blackbird. It is The Dulaig after all!</p>

<p>Not everything is in flower right now but with a hosta as beautiful as this one it does not really matter.</p>

Here we are with our award which was presented at the lovely Landmark Hotel in London.</p>

<p>In March we received a letter telling us confidentially that we had won the award.....then came the hard bit of keeping the news quiet until the ceremony on 9 May!</p>

<p>We were nominated for the award by inspectors who incognito inspect and assess B&amp;Bs all over the United Kingdom. The AA say the award recognises all aspects of the guest experience including hospitality, service and accommodation. It is regarded as the pinnacle of achievement for Guest Accommodation providers.</p>

<p>Our 17 girls have been moulting over the past few months and because of this, and the shortest days of winter, they have not been laying eggs. &nbsp;It is always a great treat to see the first egg of the New Year as this means we - and our guests - can now look forward to lots of wonderful eggs once again.</p>

<p>Here is Hyacinth. She and her sister Lavender give us these beautiful blue eggs which we use at The Dulaig B&amp;B to make delicious breakfast dishes like this Eggs Benedict.&nbsp;</p>
